This coffee is sourced from dedicated coffee-growing families across the Colombian regions of Tolima, Huila, and Caldas, then expertly processed at El Vergel Estate by Forest Coffee. Known for their innovative approach to coffee processing, Forest Coffee works closely with producers to create exceptional coffees while promoting sustainability, transparency, and fair partnerships.

Only fully ripe cherries are hand-selected before undergoing a carefully controlled fermentation. After an initial fermentation in whole cherry, the coffee is depulped and co-fermented anaerobically with yeast and natural passion fruit for five days, enhancing its vibrant fruit character while maintaining clarity and balance. The coffee is then mechanically dried and stabilized to preserve its quality.
The result is a bright, juicy cup with expressive notes of passion fruit, pomegranate, citrus, and brown sugar, showcasing both Colombia's diverse terroir and Forest Coffee's innovative processing expertise.
