From the lush mountains of Caicedonia, Valle del Cauca, Colombia, fourth-generation coffee producer Santiago Londoño carries forward a family legacy deeply rooted in Colombian coffee. Growing up surrounded by generations of coffee knowledge, Santiago has embraced both traditional farming practices and modern specialty coffee techniques to produce distinctive, expressive coffees.

At Hacienda Mallorca, located at approximately 1,600 meters above sea level, Santiago focuses on carefully selected varieties such as Caturra, Geisha, and Bourbon. The farm's cool mountain climate, fertile soils, and significant day-to-night temperature variation create ideal conditions for slow cherry development, helping build sweetness, complexity, and vibrant acidity in the cup.

Santiago's background in environmental management has also shaped his approach to farming, with an emphasis on protecting natural water sources, conserving forest areas, and developing more sustainable production systems.
